St. Patrick’s Day No-Dye Pancakes

No Dye Green St. Patrick's Day Pancakes

Hello Friends! Happy St. Patrick’s Day. I hope you have some fantastic plans this weekend whether that’s we friends or with family, you’ll probably want to start your day with something filling and healthy. Since I’m trying to be a responsible mom or something like that, I started looking for alternatives for gree dye. I wanted to make green pancakes but I didn’t want to put a ton of artificial dye in them and then feed them to Wendy. So I pulled out the fresh spinach that was sitting in our fridge veggie drawer and started experimenting.

These were probably some of the easier pancakes I’ve ever made. I mean I wasn’t about to reinvent the wheel with these, nor did I want to make them too complicated that you wouldn’t get them a try. So here’s what you’ll need:

spinach
pancake mix
water
1 egg
blender

That’s it. See simple and something you can throw together quickly for your kids. Plus you and your family will be getting a good serving of spinach. Now I won’t lie to you when I cooked these up it did have a slight smell of spinach but with a little bit of maple syrup, you and your family won’t even notice. My family sure didn’t. To make these, combine all your ingredients in a blender. I used my new Vitamix and I can’t believe how powerful it is. It chopped up and blended that spinach so quickly, it didn’t even give me enough time to pour my coffee into my mug and add almond milk…and no this isn’t a sponsored post, I’m just super impressed with my new kitchen toy and I just wanted to share my feelings about it with you.

Once everything is mix and a lovely green. Heat up your pan or griddle and pout 1/4 cup of batter for each pancake. Cook until you see bubbles forming and the edges of your pancakes are dry, then flip them over and cook for another 30 seconds to 1 minute.

Stack those beauties on a plate, or cut them up for your kids, and serve with maple syrup, fruits, whipped cream or powdered sugar or all of those and enjoy your festive and kinda sorta healthy-ish breakfast.

Ingredients

Scale
  • 1 1/2 cups of spinach
  • 1 1/2 cups of pancake mix
  • 2/3 cups of water
  • 1 egg


Instructions

  1. Combine all the ingredients in a blender and blend for a few minutes or until the spinach is finely blended with the other ingredients.
  2. Heat your pan or griddle.
  3. Pour 1/4 cup of batter onto into your pan or griddle.
  4. Cook until you see bubbles and the edges of your pancake are dry, Flip over and cook for another 30 seconds to 1 minute.
  5. Then stack those babies, add some fruits, whipped cream, or maple syrup and serve.
